Ok guys……FYI for any of you reading - Not everything on this blog is going to be raw, vegan or gluten free. I will absolutely be making some classic desserts with all the butter and sugar and cream that you can possibly put in one recipe… because we all know that these truly make for the most satisfying desserts ever!
So this week I’ve been really missing a classic British snack called the “Jaffa Cake”. Im not really sure if its classed as a biscuit or a cake but if you like chocolate and orange then this is for you. Its the BOMB! So, if you don’t like chocolate Orange you may as well stop reading this blog. I mean who doesn’t like Chocolate Orange?
If you aren’t familiar with the Jaffa Cake, I will explain. Its a small (approx 2”) round sponge with a chocolate coating on top with an orange jelly that sits in-between. The shape and size resembles a cookie (biscuit) however its texture is that of a cake. I have no idea if you can get hold of Mcvities Jaffa Cakes out here in the U.S but if you see them grab a pack, or 10 and then tell me where i can get them!
In the middle of my Jaffa Cake craving last week, I sat there googling them and what I can only assume is the result of fate, was the attraction to one image by Nadia’s Healthy Kitchen. There it was…….a Vegan, gluten free Jaffa Cake recipe. So here will be my (kind of healthy) sweet snack for the coming week.
Anyway, I hope you all enjoy… I think its about time I started working on some chocolate orange caramels!!
RECIPE “Courtesy of Nadia’s Healthy Kitchen”
Please Note: Nadia states it should make 14 Jaffa cakes however i only managed 10 with the quantities below.
1/2 c gluten free flour
1/3 c ground almonds
1/4 t salt
3 T Coconut Oil
3 T Maple Syrup
4 T Coconut Milk
Im not going to lie i cheated and used orange marmalade with some extra orange zest however if your feeling adventurous please follow Nadia’s recipe:
1/2 c Orange Juice
1 Maple Syrup
1 T Orange Zest
1/2 t agar agar
100g dairy free dark chocolate, melted and cooled slightly
Preheat your oven to 350*F
Mix together the flour, ground almonds, baking powder and salt.
Pour in the coconut oil, maple and milk. Mix to combine
Lightly oil a muffin tray and transfer 1.5 - 2 T of the batter into each cup.
Bake for 10 minutes. Cool.
Orange Jelly (if using marmalade please skip this step)
Cut out rings from the jelly once set and cool making sure its smaller than the sponge base.
If using the cheat version like myself top each sponge with a t of marmalade, if not top each with a jelly ring.
Finally drizzle melted chocolate onto of each cake
Transfer to the fridge and leave for approx 15 minutes or until chocolate has set!
Then TADA you have a Jaffa Cake - trust me you will not want to share these!
